About Vital Eats

Vital Eats began as a branded plant based sauce company, founded by Reuben Schwartz and Jude Goldman in Saratoga, New York. After years of developing and selling artisan sauces, Reuben recognized a gap: there were few facilities willing to work with small-batch producers. During Covid, Vital Eats pivoted from manufacturing its own products to helping others bring theirs to market. Since then, the company has produced sauces, condiments, and dry blends for dozens of regional brands, restaurants, and food entrepreneurs. We are a proud participant in the Hudson Valley AgriBusiness Development Corporation’s Farm & Food Funding Accelerator.

Meet Reuben Schwartz

Reuben Schwartz brings a blend of creativity, culinary curiosity, and technical expertise to every project. His passion for food manufacturing began when he created his own filling line — learning firsthand the challenges small producers face when scaling recipes safely and consistently. Today, Reuben personally oversees every client project, guiding them from idea to shelf.

Our Facility & Equipment

Located in Albany, NY, the Vital Eats co-packing space is designed for flexibility — equipped to handle both hot-fill and dry-blend processes. Our small, hands-on team in Albany, NY ensures attention to detail and adaptability for each project. We have mechanized filling equipment and have been awarded a USDA Grant to move into further automation.
